Goro clams

The northernmost coastal stretch of the province is home to the Goro lagoon, an area where shellfish farming has reached European proportions. This is the ideal habitat for bivalves such as mussels, oysters (recently introduced) and clams, both Philippine (a species introduced into Italy for commercial purposes) and true clams. Their soft, fleshy bodies lend themselves to various culinary preparations, even simple ones such as pan-fried with garlic (perhaps Voghiera DOP) and oil.
