Bianchetto Truffle

The first reliable records of truffles date back to the 1st century AD, and we know that they were highly prized in the Middle Ages and Renaissance, especially at the tables of nobles and high prelates. Always difficult to find, they have recently been cultivated experimentally. In our province, they are found and cultivated in the upper Ferrara area, and in particular in the Bondenese area, which is important nationally for the prized white truffle but where the smooth black truffle, less expensive but still excellent, and the varieties known as the black winter truffle and Scorzone are also found. Widespread in the Mesolano Delta area is the Bianchetto or pine forest truffle, which is generally smaller than the prized white truffle and less renowned, although still excellent. The municipality of Bondeno has established a De.Co. (Municipal Designation) to protect its truffles.
