Saba dell’Emilia Romagna

Saba is a typical condiment used in Emilia Romagna and Sardinia, but it is also widespread under different names in the Marche region, where it is called ‘mostocotto’, and in Puglia and Sicily, where it is called ‘Vin cotto’. Produced by concentrating must over direct heat, it has an intense, aromatic flavour with a strong sweetening power. Saba is also the key ingredient in another typical product, Sabadoni.
