Ricciolina ferrarese

The Ricciolina is a typical savoury pastry from Ferrara, a rolled plait formed into a ring, usually made from puff pastry and bread, although some producers offer both a bread-based and a puff pastry version. It is traditionally eaten for breakfast, but is also delicious as a snack or with an aperitif. In 2023, the Ricciolina from Ferrara was entered in the register of Ferrara’s municipal De.Co products.
