Pinzino

Pinzino is a deep-fried dough made from flour, lard, sparkling water, yeast and salt. Both the dough and the name can vary depending on the region – for example, ‘gnocchino fritto’ in the Cento area – and both probably derive from the Mantua or Bologna version known as ‘grocco fritto’. They are usually eaten as street food at local festivals and celebrations, or served in restaurants and taverns alongside Emilian cured meats and cheeses.
