Snail

In common usage, the terms “snail” and “land snail” are synonyms; in reality, it is the land snail (the one with the shell) that is used in cooking. This practice has ancient origins: there are records of snail farms dating back to 49 B.C., and we know that they were highly prized by the Greeks and Romans. In the Middle Ages, they were often a staple food for peasants and the poor. In this province, their culinary use has persisted and become a tradition.
