Ciambella (Brazadela)

Ingredients:
- 300 g plain flour
- 130 g sugar
- 100 g butter
- 15 ml anise liqueur
- 2 eggs
- 8 g baking powder
- 1 pince of salt
- 1 g bicarbonate of soda
- Grated zest of 1 lemon
- 1 egg for brushing the surface
- 100 g granulated sugar
Soften the butter and place it in a large bowl with the flour, sugar, baking powder, bicarbonate of soda and salt. Mix until everything is completely blended. Then add the eggs, aniseed liqueur and lemon zest. Line the baking tray with baking paper and shape the dough into a cylinder about 25 cm long.
Brush with beaten egg and sprinkle with granulated sugar. Bake in a static oven at 180°C for 30-40 minutes until the doughnut turns a beautiful golden colour.
NB: it is excellent for breakfast, dipped in hot milk, or after lunch, dipped in a drop of sweet wine.
For a more modern version, try the two-colour brazadela with chocolate shortcrust pastry.
